Spinach Fritata serves 4 as light entree from Diane Inman This is one of our favorite "easy,prepare ahead" meals. The unbaked fritata can wait covered in the refrigerator overnight without any problem. 10oz pkg frozen (chopped-?) spinach, thawed 1 cup ricotta cheese 3/4 cup grated parmesan 2 Tbl grated onions 2/3 cup sliced mushrooms 1/2 Tbl oregano 1/2 tsp salt 1 egg Mix all ingredients and pour into a greased 8x8 baking pan. Bake at 370 F for 30 min or until golden.
