Salmon Steaks in Black Pepper Crust for 2 from Gourmet / unknown issue Marinade: 2 Tbl soy sauce 1 garlic clove, pressed 2 tsp lemon 1 tsp sugar 4 tsp course ground pepper, (freshly cracked if possible) 2 Tbl olive oil 2 fresh Salmon steaks, ~1" thick each, trimmed of skin if desired. Mix marinade into zip-lock bag, place salmon steaks in bag, and marinate in refrigerator 30min. Pat steaks dry, and dredge through ground pepper, coating both sides. Heat olive oil in hot skillet until almost smoking. Sear steaks, about 2min/side. CASEY & MATT's NOTES: This is a very peppery dish, best served with simple white rice. Salmon is best if just barely seared -- middle should still be sashimi-style. A hearty red wine works best, like a Storybook Mountain Zinfandel (white wine is totally lost against the pepper).
